Chicken Yakitori

Chicken Yakitori is a Japanese finger-food which is traditionally served as a snack and accompanied by drinks, and makes for a great addition to a barbeque or buffet-style lunch or dinner, and great for picnics too.

 

It is a delicious combination of sweet, savoury and umami ingredients enhanced by the exquisite balance of colour, flavour and aroma of the Naturally Brewed Kikkoman Soy Sauce, which stimulates the appetite and imparts vividness to the dish.  

 

Additionally, for a quick weeknight dinner, make this a meal served with rice, noodles or grilled vegetables and reserved sauce.

 

Ingredients

  • 120ml Kikkoman Soy Sauce
  • 70ml Sake
  • 70ml cup Mirin
  • 35g brown sugar
  • 3 tablespoons water
  • 2 cloves garlic
  • Handful of spring onion
  • 600g chicken thigh fillet, cubed
  • Wooden skewers
  • Sesame seeds for garnish

Method

  • Place skewers in a dish of cold water, leave for about 45 minutes
  • Place a saucepan on a medium-high heat. Add the mirin, sake, soy sauce, water, garlic and sugar to the pan, stir well to combine and cover.
  • Once it reaches a boil, lower heat, remove the lid, and leave for another 15-20 minutes. Remove from heat once sauce has thickened. Allow to cool.  Reserve a portion of the sauce for serving.
  • Skewer the chicken pieces. Baste with the sauce and place on the grill. Grill one side for about 4-5 minutes, baste with more sauce and then turn and grill for a few minutes longer until cooked. 
  • Remove from grill, garnish with chopped green onion and serve with rice, noodles or grilled vegetables, and the reserved sauce.
