Gnocchi alla Sorrentina

Gnocchi alla Sorrentina is a traditional Italian dish, which is such a comfort food. Comprised of potato gnocchi baked in a rich tomato sauce with creamy mozzarella cheese and basil leaves, the dish is absolutely scrumptious.

Ingredients

  • Granoro Potato Gnocchi (500g)
  • 2 cans Di Napoli Cherry Tomatoes
  • 2 garlic cloves finely chopped
  • 1 large handful of fresh basil
  • Dal Molise Mozzarella, roughly chopped or torn (2 balls / 250g)
  • Zanetti Parmigiano Reggiano
  • 2 tablespoons Olitalia Extra Virgin Olive Oil
  • Salt and pepper to season

Method

  • Pre-heat the oven to 220C
  • Heat the olive oil in a large pan, add the garlic and gently sauté for 1-2 minutes.
  • Next add the tomatoes, season with salt and pepper and let simmer for 10-15 minutes. Add half the mozzarella and basil then stir to combine.
  • Cook the gnocchi per package instructions
  • Add the cooked gnocchi to the tomato sauce, ensuring they are well-coated. Transfer to an oven-proof baking dish.
  • Top with the reserve mozzarella and place in the oven to bake for about 20 minutes.
  • Serve with grated Parmigiano Reggiano cheese over the top, and basil leaves to garnish. Toasted bread is an optional serving suggestion.
