Torrone - Homemade with Love

Torrone is a well-loved sweet confectionery synonymous with an Italian Christmas, dating back hundreds of years ago. Ingredients

  • 145g roasted almonds, 
  • 145ml water, 
  • 1 cup sugar
  • 150ml honey, 
  • 2 egg whites, 
  • 1 vanilla pod, 
  • pastry wafer paper

Method

  • Add sugar and water to a saucepan, mix until well combined, and then place on medium heat. Once syrup has reached 145 degrees Celcius, remove from heat. Separately, combine the honey and vanilla in another saucepan, and heat until temperature reaches 120 degrees Celsius, and then remove from heat.
  • In a bowl, whip up the egg whites with an electric whisk. Pour the heated sugar and honey syrups over the egg whites, mix well and then add the almonds. Stir constantly until well-combined.
  • To a butter-lined baking tray, place the pastry wafer paper. Pour the mixture over the wafer paper, and spread evenly. Cover with top layer of wafer paper. Place in fridge and allow to set for 12 hours.
  • Once set, cut into desired pieces.
